What kind of crowds (at the major tourist sites - louvre, eiffel tower, notre dame, sacre coure, catacombs) should I expect in Paris in March? And should I expect the weather to be cold?

From what I understand, it is not too crowded in March. But, I would guess that it will get a bit more crowded towards the end of March as everyone is trying to get in on the pre March 31 low rates AND get the best weather possible.
What time of month are you going? You can expect any kind of weather and you should dress in layers. You will need to bring a coat unless you have a lot of heavy layers and a scarf. Late March of course could render slightly warmer days than early March. For history of weather on days you plan to be in Paris go to:

With only a two(2) day itinerary--and those days being Monday and Tuesday, you NEED to pay particular attention to the OPEN / CLOSED days of museums and attractions. As an examples, the Musée d%26#39;Orsay, Rodin and Carnavalet will all be closed on Monday and the Musée du Louvre, Picasso, Centre Pompidou will be closed on Tuesday.
